Try something different this Christmas, with a sweet and gently-spiced nut roast.
Serves 6 – 8/cooks in 45 minutes
100g cooked rice
1 x large sweet potato
1 x white onion
2 x garlic cloves
6 x dried apple rings
200g cashew nuts
2 tbsp chopped sage
2 tbsp fresh thyme
1 tsp mixed spice
Salt and pepper
Pre-heat your oven to 180◦c and line and grease a baking tray.
Finely slice the onion and garlic and gently fry for two minutes.
Next, finely chop the apple rings and add to the onions along with the herbs. Continue to cook low and slow until the onions have softened and become translucent. Once cooked leave to one side to cool.
Grate the sweet potato and place into a mixing bowl. Once the onion mix is cool, add to the sweet potato.
Place the cashew nuts into a food processor and blitz until roughly chopped. Add the nuts to the mixing bowl.
Add the mixed spice along with some salt and pepper to season and mix well.
Mould the mix into burger-like patties and place onto the baking tray.
Brush each pattie with a little olive oil and bake for 40 minutes (turning after the first 30 minutes), or until golden and crispy on the outside.
