    Recipe: Pea, mint and ham bruschetta

    These bruschettas are perfect for an antipasti or a light lunch and very simple to put together.

    Serves: 12
    Preparation time: 45 minutes


    An assortment of festive canapes.
    • 12 slices of ciabatta (2cm thick)
    • 150g frozen peas (defrosted)
    • 115g mascarpone cheese
    • ½ lemon, zest and juice



    • 1 clove of garlic, minced
    • 1 bunch of fresh mint
    • 100g shredded ham hock
    1. Place the peas, lemon juice and zest, garlic and fresh mint into a food processor and blend until smooth. Empty into a mixing bowl and add the mascarpone cheese and some salt and pepper. Mix well and place into a fridge for 30 minutes to firm up.
    2. Place a large frying pan on a medium heat and toast the bread off in batches. Once the bread has cooled, top with the pea and mascarpone puree, followed by a little ham.
