    Recipe: Avocado toast with rocket and tomatoes

    Avocados are nutrient-dense, filled with healthy monounsaturated fatty acids, and plenty of vitamins and minerals.

    Add a tasty twist to a brunch classic by adding tomatoes and rocket to your avocado toast.

    Don’t be afraid to experiment with toppings, the possibilities are endless!

    SERVES 2
    ASSEMBLY TIME: 10 MINUTES
    Ingredients
    • 4 slices of wholemeal bread (or a bread of your choice)
    • 1 avocado peeled and seeded
    • 4 handfuls of fresh rocket leaves

     

     

    • 12 cherry tomatoes halved
    • 1 red onion finely sliced
    • Red pepper flakes to taste (optional)
    Method
    1. Toast your bread in a toaster or under a hot grill.
    2. Halve your avocados and remove the stone and scoop out the flesh. Place in a bowl and gently mash with a fork.
    3. Spread mashed avocado evenly onto each toast slice.
    4. Top avocado with tomato halves, thinly sliced red onion and rocket leaves.
    5. Season to taste with salt and pepper and red pepper flakes (optional)
