    How to reduce your Christmas food waste

    Christmas is a time of year of generosity and sharing, which may mean that we have many food leftovers after the Christmas feast.

    Reducing food waste at this time of year can be achieved by using some of the handy tips below:

    1. Plan your menu for the Christmas period and shop from a shopping list, this will make it easier to avoid buying items that you may not be able to use.
    2. Make a healthy stock with leftover vegetables like carrots, onions, leeks and herbs eg sage and/or rosemary. Use the turkey carcass and any bones from joints. Add to a large pot and top with water and a tablespoon of vinegar. Bring to the boil and leave to simmer for 1 – 2 hours the longer the better. Once done, strain out all the vegetables and bones and you can reduce the stock further. Portion into clean jars and store in the freezer. If you reduce it you can put into an ice cube tray. This gives you a lovely healthy stock that you can add to soups and stews.
    3. Cooked carrots and parsnips can be turned into a delicious soup. Sauté onions slowly add garlic, 1 teaspoon cumin and ¼ teaspoon cayenne pepper. Add the cooked carrots and parsnips, vegetable stock and a handful of red lentils. Blend into a smooth soup, portion up and freeze.
    4. Brussel Sprouts and potatoes turned into bubble and squeak. Sauté onion, add chopped leftover bacon and sausages (pigs in the blanket) chop up cooked Brussel Sprouts and crushed up roast potatoes or mash potatoes. Perfect topped with a poached egg.
    5. Lighten up any leftover Christmas pudding, stew up apples and pears with spices. In dessert, bowls crumble Christmas pudding at the bottom then put in your stewed fruit and top with plain yoghurt.

    With some creative thinking, there is no need to waste any food over the Christmas period. Putting food in the freezer means the abundance of Christmas can last right into January.
